Refresh Soup

Super yummy refreshing soup, nice and juicy and crunchy!
  • Blend up a bunch of tomatoes and a field cucumber (more economic). I usually end up using 6-8 tomatoes, enough for the blender to be full after adding the cucumber.
  • Add pressed/minced garlic cloves to taste, let sit on top for a few minutes to mature before blending again
  • Add 2 finely chopped jalapeƱo peppers (optional)
  • Add 1Tbs olive oil
  • Blend again
  • Dump into a large storage/serving bowl
  • Add celery and red, orange, yellow, green peppers - chopped up into nice little crunchy sizes
  • Add fresh basil and black pepper to taste
Cover and chill overnight. For extra protein and appeal, top each serving with 4-5 Tbs of hemp hearts.
